Eat A Protein-Rich Pudding With This Tofu Chocolate Mousse Recipe

We know what you’re thinking. Tofu in a mousse. That sounds… odd? Although, come to think of it, how many of us could truly be sure that all mousses aren’t made with tofu? The mousse is one of the more mysterious desserts, after all.

Anyway, putting aside whether all mousses are made with tofu or not (they’re not), let’s explain why there’s tofu in this mousse. Simply put, tofu is an excellent non-meat protein source. It contains 12g of protein per 100g, a solid stat that means tofu makes the list of our favorite high-protein foods.

In combination with the chocolate protein powder also in the recipe, tofu makes this mousse quite the muscle builder, with 26.2g of protein in every serving. Furthermore, the dark chocolate in the recipe contains flavonols that are thought to protect against the cellular and tissue damage caused by intense training. In short, whether you save this mousse for dessert or have it as a post-workout snack, it’s going to be doing your body a lot of good.

There is some bad news to consider too – it is a chocolate pudding after all – starting with the fact that the mousse contains 294 calories per serving. There’s also 32.5g of carbs in each portion, so keep an eye on your overall calorie intake to make sure your mousse-break isn’t a mousse-take in terms of busting your macros for the day.

Ingredients (Four Servings)

  • 175g dark chocolate (approx 80% cocoa solids)
  • 350g soft tofu
  • 1 scoop chocolate protein powder (see best protein powders if you need help choosing one)
  • Juice and zest of two oranges
  • Grated orange zest and chocolate (to serve)

Method

  1. Melt the chocolate in a bowl over a pan of simmering water, stirring occasionally. Allow to cool slightly.
  2. In a food processor, blend the melted chocolate with the tofu, protein powder, orange zest and juice until smooth and creamy.
  3. Spoon into four dishes and chill in the fridge until set. Decorate with a little orange zest and grated chocolate.
